Bretonnians?!, but they are practically French.......sorry.
You could go for the whole knight theme with no men at arms at all but that does leaving a gaping whole in army effectivness and probably isnt the best idea (looks cool though).
If you do go for the all knight option then i'd base it around Knights Errant's as they are cheap it means you won't be compromising so much on numbers. You could even use the Storm of Chaos Errantry War army list (can download it from the GW website). _____________________________________________
If you are going for the regular mixed force (the 'defending the realm' kind of force) then i'd base it around (assuming your starting at 1000pts) :
2 Units of 9 Knights of the Realm with full command. This will provide a solid cavalry core to your force for 480pts.
Then for the infantry I would take:
1 Unit of 20 Men-at-arms with spears, standard and musician: 155 pts
10 Bowmen with defensive stakes: 60pts 10 Skirmishing bowmen: 70pts
This would be your rearguard and could hold your battle line and provide fire support. You could put a Trebuchet with these, this would give you quite a nice fire base wich might provide a nice change from your undead.
To lead your army maybe a Paladin with the Virtue of the joust and a lance and shield? That would make quite a formidable character when he charges.
Perhaps to finish off the force 5 Mounted Yeomen, these can add to your forces fire-power and will be invaluable at hitting the flanks of enemy units to support your knights (as these are fast cavalry). They could be a big help if you manage to keep them alive.
That would leave you with about 30 pts for a magic item for your Paladin. Could be a Gromril great helm (re-roll saves), Lance of Artois (killing blow on the charge, should work well with the virtue of the joust) or the Heartwoork lance (re-roll failed wounds).
All that should come to around 1000pts
