Now I know that you've all heard this a million times, and If this isnt the right board for it lemme know. But.. I was looking into starting Fantasy, I play 40k semi-regularly, and was wanting to play something skirmishy to start with, a very ambushy army. Now I've had Lizards, Skaven, Welfs and Delfs suggested to me but I was wondering which of the more ambushy armies would be best to use to get used to the game and learn it that can be a winning list in the hands of a beginner? Skirmishing and Ambushing and easy to use?
Beastmen seem like the perfect army for you, the only problem is that they are one of the weaker armies and you will often struggles to win with them.
Wood Elves are another army that is hard to use.
Any list that is Skirmishy and Ambushy is going to take some skill to use.
I would say go for Lizards, they are powerful but also have a lot of throw away skirmishing units. You even have the option of scouting Chameleon Skinks.
Some Solid blocks of Sauros, with Slaan in Temple Guard and maybe a Priest on the Engine of the Gods supported by Skink support units will make a powerful list, not too hard to use and the skirmishing and ambushing ability you want.

Are Dark Elves very Skirmishy? Slash easy to play? Cos I think I like them

I can't help you out with the easy to play bit, but dark elves aren't exactly skirmishy, they're underhand.

Actually, you can have a pretty powerful Dark Elf army like what you want using;
Shades - As your skirmishers Dark Riders - Easy to use core Hydras - Easy to use Skirmishers again
This will let you outmanouver your opponent, shooting at him with a boat load of repeater crossbows before smashing into him with a few Hydras.
Shade Tribe -
7 Shades; Great Weps 7 Shades; Great Weps 7 Shades; Great Weps 7 Shades; Great Weps
5 Dark Riders; Crossbows, Musician. 5 Dark Riders; Crossbows, Musician. 5 Dark Riders; Crossbows, Musician.
Hydra; Hydra;
Master; Pegasus, Shield, Lance, Heavy Armour, Sea Dragon Cloak, Ring of Hotek. Master; Pendant of Kaleth, Great Weapon, Heavy Armour, Sea Dragon Cloak. Sorceress; Dark Steed, 2 Scrolls.
Assassin; 2 Hand Weps, Manbane, Rending Stars. Assassin; 2 Hand Weps, Manbane, Rending Stars.
That will be a very powerful and easy to use list. Just dont go charging your Riders or Shades into the front of fully ranked up units. Thats what the Hydras are for, the other units hit the flanks after softening them up with crossbow fire.
Pop that Pegasus Master behind the enemy unit with the best mage in to make him Miscast then hit the rear when your Hydra charges the front.

Honestly, I have to say that your problem is "Skirmishy" mixed with "Easy."
Skirmishy loses out massively in the leadership, that's all there is to it. That is why you need to be good enough to use them, they aren't easy to get a handle on.

Good luck with it man.
If you want to save some money, I would use the Corsair models as shades, just claim those Sea Dragon cloaks are Hydra skins.
