The paymaster needs more defense, I like to put him on a barded horse with a shield and crossbow.
I'd lower the Crossbows to 10 each and make the Pikes 25 each. You need the numbers for Pikes.
Drop all the Cav into units of 5, you could lose the Bows to.

The way I wanted to play my army was having a good firebase with a couple large units for defence. But what is good tactic for running dogs of war?

Yeah and also with the pikemen, I think I'm just going to bite the bullet and buy as many Riccos Republican guard as I need, and use those models as my pikemen units. I'll be using empire crossbowmen as my crossbows, and I was thinking of getting mounted yeomen but even they are expensive for light cavalry. I'll be using empire knights for my heavy knights, and probably be using two units of ten w/o full command since like I've heard, they are to expensive. I'm probably going to buy a lot of empire models to convert, like the paymaster/battlestandard bearer model. Also the empire captain, and a wizard too.

I wouldnt use 2 units of 10 without a standard, if you take 10 in a single unit, which i wouldnt advise anyway, you should be giving it a standard and musician. For Light Cav I used Empire Pistoliers with some hand weapons and bows from the Militia Sprue. Dogs of War are good on the defence, holding back with your crossbows and cannons and then having your Pikes [their flanks protected by Duellists] hold the line, then have your Heavy Cav smash into flanks. With Heavy Cav, Light Cav and Skirmishers all as Core though it is a very verastile army. It can go on the offense with its Cav or defense with its Pikes and firepower. It is one of the few armies that you can adapt to almost any situation with [besides magic defense ]

Yup, then I think I'm going to go with two or three good sized units of crossbowmen, one cannon, and then two large units of pikes with the light and heavy cavalry to protect flanks along with duelists. Also howcome I see ogre leadbealchers in some list? where does it say I can do that?

Thats in the Ogres book. Bulls, Ironguts, Leadbelchers and Maneaters are all DoW choices, even though Maneaters are a rare for Ogres, they are only a special for DoW! [Maneaters are travelling Mercs after all].
I take Leadbelchers to add to my Firepower and then to support with a flank charge. Maneaters are amazing though, especially for anchoring a flank due to their ItP and Stubborn.

I might just get some leadbelchers then! When I get back home tommorrow I think I'll work on a smaller list ( 1500 ) and then download the DoW army list for good. The only thing stopping this is me not getting the job I applied for >.<

Maneaters can also have a Brace of Handguns which have pistol rules but handgun stats. For 2 long ranged accurate high strength shots each.
