Bulls are obviously going to be your mianstay unit, with enough of them in a squad [4-8] they will be more than a match for most enemy units, especially if you take a Standard and Champion. 6 per squad is a nice size, you can either put them in 1 rank and should still have a 4 model frontage when you hit the enemy, or go for two ranks for the additional strength on the impact hits.
IronGuts or ok, although they are a little expensive, not a bad bodyguard for your leader.
Lead Belchers are great and if you don't like Gnoblars they are quite capable of covering your flanks with their quite impressive firepower. Ideal for blasting away small units trying to out flank you.
Gnoblars can win a combat if there are enough of them and you have a standard, giving them 'sharp stuff' to throw often come in handy. They are best used to support your Ogres in assault, to engage the enemy flank etc. They are also often used to guard your own flanks.
Yetis are fast unit so are ideal for harassing the enemy and hunting down enemy war machine crews etc, although that is something that Gorgers are also good at. Yetis can be used to out flank the enemy and are great at dealing with those annoying ethereal creatures. Gorgers are good at, as ive said, taking down war machines, but they are also good at holding up large enemy units.
Scrap Launchers are pretty simple. They add fire-power and can act as a chariot, not a bad choice.
Slave Giants are just like regular giants with a few different attacks, but they are likely to run away, not a great choice IMO. Ogres can pack as much of a punch and are more likely to stick around when the going gets tough.
Maneaters are good but they take up 2! rare slots. Still, they have access to nice equipment and they are stubborn. A great unit all round really. Like a squad of characters.
Ogres also have good magic defense and some powerful characters.
Always take a decnent core of Bulls as you need all the numbers you can get, especially if you arent taking Gnoblars. If you go overboard on special and rare units then you wont have enough bulls.

They are very powerful but they are also an aweful lot of points.
They are also very difficult to manouvere, I wouldn't suggest using them against and experienced commander unless you are at least quite experienced yourself. Otherwise they will be avoided and braught down by flank charges etc.
Against an average player though they can be effective and if you know what your doing, even against a very good enemy commander you can use them to deny certain areas of the battlefield to the enemy, areas from where you can then launch assaults with other units.
At the base of things they are a simple, heavy hitting power unit. But as with all really powerful units, they can be used to actually alter how your opponent is playing.
The other downside is that they are expensive to make too.
